Amaranthus Stem Curry(Thotakura Kadalu Curry)

                                      

In this article, I’ll share how to prepare amaranthus stem curry (thotakuira kadalu Curry). 

This curry is new in these days. But in olden days they used to make many recipes using these. My grand mother used to prepare this curry in 2 ways. This is one of the recipe.

Ingredients Required
  • Amaranthus stems – 4
  • Onion- 1
  • Green chillies – 2
  • Oil – 2tbsp
  • Red chillies – 1
  • Mustard seeds – 1tsp
  • Cumin seeds – 1tsp
  • Salt – 1 n 1/2tsp
  • Turmeric – 1/2tsp
  • Red chilli powder – 1tsp
  • Garam masala – 1/2tsp
Preparation
  1. Chop amaranthus sticks as shown in the video
  2. Add oil to heated pan
  3. Add red chillies, mustard seeds, cumin seeds
  4. Add chopped onion and mirchi and fry till colour changes
  5. Add chopped amaranthus sticks and mix all together
  6. Add salt, turmeric, red chilli powder, garam masala and mix
  7. Close lid and cook for 4whistles in high heat
  8. Thotakura kadalu Curry is ready to serve
