A fried version of the classic Andhra style Arbi stir fry, this Chamadumpa fry , is loaded with simple Indian masalas to make this delicious dish. Serve this dish along with chaaru & steamed rice for a simple weekday lunch.

Ingredients Required
- Arbi – 1/2kg
- Onion – 2 chopped
- Green chillies – 3 chopped
- Oil – For deep fry
- Red chillies – 2
- Chanadal – 1tsp
- Uraddal – 1tsp
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Salt – 2tsp
- red chilli powder – 2tsp
- Turmeric – 1/2tsp
- Curry leaves
Preparation
- Add arbi into a cooker and cook for 2 whistles
- Peel off the layer and cut them into half
- Add them into hot oil for deep fry and keep them aside
- Add oil to other pan for tampering
- Add red chillies, chanadal, uraddal,mustard seeds, cumin seeds, curry leaves
- Add chopped onion and mirchi and fry till colour changes
- Now add fried arbi pieces and mix
- Add salt, turmeric, red chilli powder and mix
