Bitter Gourd Pickle

                                          


In this article, I’ll share how to prepare bitter gourd pickle easy way. Generally bitter gourd is used to prepare gravy curries and fry curries, but very few people know this bitter gourd pickle. 

It is very tasty and people who love spicy food enjoy alot. It tastes same as non veg pickles(for me). It is very easy process every one can make if you can follow the correct measurements.

Ingredients Required
  • Bitter Gourd – 1/2kg
  • Tamarind – 125gms
  • Salt – 125gms
  • Raw Red chilli powder – 125gms
  • Fenugreek seeds – 2tbsp
  • Garlic cloves – 1 full garlic
For Tampering
  • Oil – 1/4th litre
  • Red chillies – 3
  • Chanadal – 2tsp
  • Uraddal – 2tsp
  • Mustard seeds – 2tsp
  • Cumin seeds – 2tsp
  • Curry leaves
Procedure
  1. Clean 1/2kg bitter gourd and dry them properly
  2. Add 125gms tamarind into a bowl, add water and soak for 20mins
  3. Chop bitter gourd into round pieces
  4. Add them into hot oil for deep fry and keep them aside
  5. Add tampering into same oil after removing fried bitter gourd pieces
  6. Add red chillies, chanadal, uraddal, mustard seeds, cumin seeds, curry leaves and let fry
  7. Let tampering cool for sometime
  8. Meanwhile add fenugreek seeds into a heated pan and fry for 2min or till colour changes
  9. Add fried fenugreek seeds, garlic cloves into a mixi jar and grind to fine paste
  10. Now add soaked tamarind on the stove and cook for 5min
  11. Add it to mixi jar and grind to fine paste
  12. Add salt, raw red chilli powder, grounded paste and grind it to fine paste
  13. Now add the paste into fried bitter gourd pieces and mix
  14. Add it to tampering and mix
  15. Bitter gourd pickle is ready and can be stored for 1yr
