Brinjal Fry

                                      

In this article, I’ll share how to prepare brinjal fry. 

It is a quick and easy dish prepared with purple brinjal or eggplant for rice. It tastes superb and easy to prepare. Lets check out the recipe. I am sharing my Youtube video here so it would be easy for you to follow. 

Ingredients Required
  • Brinjal 1/2kg
  • Onion – 2chopped
  • Green chillies – 2 chopped
  • Oil – 2tbsp
  • Red chillies – 2
  • Chanadal-2tsp
  • Uraddal – 2tsp
  • Mustard seeds – 1tsp
  • Cumin seeds – 1tsp
  • Ginger – small piece
  • Turmeric – 1/2tsp
  • Curry leaves
  • Salt – 2tsp
  • Red chilli powder – 2tsp
Preparation
  1. Chop brinjal into salt water and keep them aside
  2. Crush small ginger piece and keep aside
  3. Add oil to heated pan
  4. Add red chillies, chanadal, uraddal, mustard seeds, cumin seeds, curry leaves
  5. Add chopped onion and mirchi and fry till onion is transclucent
  6. Add grinded ginger, turmeric and mix
  7. Add chopped brinjal and mix
  8. Add salt, turmeric and cook till brinjal is cooked perfectly
  9. Add red chilli powder and mix
  10. Brinjal fry is ready to serve
