In this article, I’ll share how to prepare brinjal fry.
It is a quick and easy dish prepared with purple brinjal or eggplant for rice. It tastes superb and easy to prepare. Lets check out the recipe. I am sharing my Youtube video here so it would be easy for you to follow.
Ingredients Required
- Brinjal 1/2kg
- Onion – 2chopped
- Green chillies – 2 chopped
- Oil – 2tbsp
- Red chillies – 2
- Chanadal-2tsp
- Uraddal – 2tsp
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Ginger – small piece
- Turmeric – 1/2tsp
- Curry leaves
- Salt – 2tsp
- Red chilli powder – 2tsp
Preparation
- Chop brinjal into salt water and keep them aside
- Crush small ginger piece and keep aside
- Add oil to heated pan
- Add red chillies, chanadal, uraddal, mustard seeds, cumin seeds, curry leaves
- Add chopped onion and mirchi and fry till onion is transclucent
- Add grinded ginger, turmeric and mix
- Add chopped brinjal and mix
- Add salt, turmeric and cook till brinjal is cooked perfectly
- Add red chilli powder and mix
- Brinjal fry is ready to serve
