It is a simple and effective dry curry recipe made with finely chopped carrots, beans and coconut. it is an ideal south indian side dish for dal rice or rasam rice combination or even for chapati.
This recipe can be prepared with no onion no garlic recipe which can be served for any festival and celebration feast.
Fry Recipes are very common in south indian cuisine and is a must for day to day lunch and dinner. it can be made with myriad vegetables and also with the combination of veggies. one such hugely popular stir-fry recipe is carrot beans fry.

Ingredients Required
- Carrot – 3
- Beans – 1/4kg
- Oil – 2tbsp
- Chanadal – 2tsp
- Uraddal – 2tsp
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Curry leaves
- Salt – 2tsp
- Red chilli powder used for fries – 2tsp
- Dry coconut powder – 2tbsp
Preparation
- Chop beans and add into a cooker and cook till 4whistles
- 4 whistles later transfer to strainer and keep them aside
- Now add oil to heated pan
- Add red chillies, chanadal, uraddal, mustard seeds, cumin seeds, curry leaves and fry
- Now add chopped carrot, salt and cook till carrot is cooked perfectly
- Add beans and fry both for 4 to 5 mins in medium heat
- Add red chilli powder used for fries and mix all together
- Finally add 2tbsp dry coconut powder
- Carrot beans fry is ready to serve
