Potato Capsicum Fry

                                      


In this article, I’ll share how to prepare Potato Capsicum Fry easy way. This is one of the easiest yet one of the tastiest vegetable stir fries.

Aloo Capsicum or Aloo Shimla Mirch is a dry Indian curry made with stir fried Potatoes & Capsicum. It is a very simple dish as it is made with minimal spices or other ingredients.

Aloo capsicum fry is a good combination of tasty potatoes and tangy capsicum. It is mainly a North Indian dish, although is has become popular across all regions in India.

It is quick to cook and quite delectable. It can be taken with any kind of Indian bread like Phulkas, Puris or Parathas or enjoyed as a side dish with rice and dal. This is also a good option to pack in kid’s tiffin boxes.

Ingredients Required
  • Oil- 2tbsp
  • Red chillies- 1
  • Chanadal – 1tsp
  • Uraddal – 1tsp
  • Mustard seeds – 1tsp
  • Cumin seeds – 1tsp
  • Curry Leaves
  • Capsicum – 2
  • Potato -3
  • Onion – 1
  • Green chillies – 2
  • Turmeric-1/2tsp
  • Salt – 2tsp
  • Red chilli powder- 2tsp
Preparation
  1. Add oil to a heated pan
  2. Add Chanadal, Uraddal, Mustard Seeds, Cumin seeds, Curry leaves
  3. Add onion and green chillies and fry for 3 to 4mins in medium heat
  4. Add chopped potato and fry for a minute
  5. Add 1tsp turmeric, mix and cook till potato is cooked for 50%
  6. Now add chopped capsicum and salt
  7. Close lid and cook for 5mins
  8. Now fry in high flame till potatoes and capsicum are cooked
  9. Now add red chilli powder and fry for 2min
  10. Finally garnish with coriander leaves
