In this article, I’ll share how to prepare ridge gourd egg bhurji.
Ridge gourd is a very famous vegetable in India and almost all cultures eat it in some form or another. This vegetable has many health benefits as well. Eggs are also very good for eyes, and high in proteins. Now I am preparing these two combination, that is Ridge gourd Egg Bhurji. It is very tasty and easy to prepare.
Serve this along with hot steamed rice, sambar and rasam to make a wholesome meal. Now lets get into the recipe. I am sharing my Youtube video here so it would be easy for you to follow
Ingredients Required
- Ridge Gourd – 2
- Eggs – 3
- Onion – 2
- Green chillies – 3
- Salt -2tsp
- Red chilli powder – 2tsp
- Turmeric – 1/2tsp
- Garam masala – 1/2tsp
- Oil- 2tbsp
- Red chillies – 1
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Curry leaves
Preparation
- Add oil to heated pan
- Add red chillies, mustard seeds and cumin seeds
- Add chopped onion and green chillies
- Let fry till onions are transparent
- Add chopped ridge gourd, add salt, turmeric close lid and cook till ridge gourd is cooked perfectly
- Now turn too high flame and cook for 3 to 4mins to evaporate extra water
- Turn to medium heat
- Now add eggs and leave it for 3 to 4mins
- Now mix it with ridge gourd and fry for 2 to 3mins
- Add red chilli powder, garam masala and mix
- Finally garnish with coriander leaves
