In this article, I’ll share how to prepare snake gourd fry.
It is a simple comfort food from my everyday cooking, Snake Fry Recipe, another recipe typical to Andhra Cuisine. It is the veggie that gives a unique flavour to the curry.
Snake Gourd is also called Potlakaya in Telugu, it has a snake like shape and possesses vitamins A, B and C including significant levels of dietary fibres and a large amount of water. It is a low calorie food and helpful for healthy nutrition.

Ingredients Required
- Oil – 2tbsp
- Snake gourd – 3
- Toor dal – 1/2cup
- Chanadal – 1tsp
- Uraddal – 1tsp
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Curry leaves
- Coriander leaves
- Garlic – 5 or 6 cloves crushed
- Salt – 2tsp
- Red chilli powder – 2tsp
Preparation
- Add 1/2 cup toor dal into a bowl and clean once
- Add water and let soak for 20mins
- Meanwhile chop snake gourd, add salt into snake gourd pieces and mix
- Releases more water now, now squeeze extra water and keep pieces aside
- 20mins later cook toor dal till grain breaks easily, remove water and keep aside
- Now add oil to heated pan
- Add chanadal, uraddal, mustard seeds, cumin seeds, curry leaves and fry
- Add crushed garlic and fry
- Add chopped snake gourd pieces, salt, turmeric and fry till pieces are cooked perfectly
- Add red chilli powder and fry for 2mins
- Finally garnish with coriander leaves
