In this article, I’ll share how to prepare amaranthus fry. Thotakura fry is a quick Indian spicy stir fry recipe served as a side dish with plain rice, dal, rasam, pappu. By just frying all the ingredients thotakura vepudu can prepare easily in 10 minutes. Green leafy vegetables are an important part of a healthy diet.
Thotakura /amaranthus is a great source of iron and to include it in my meal often I prefer making Thotakura Fry- Amaranthus Fry.

Ingredients Required
- Peanuts – 2 tsp
- Salt – 1tsp
- Dry coconut powder – 2tsp
- Garlic cloves – 5 or 6
- Red chillies – 3
- Oil – 2tbsp
- Mustard seeds- 1tsp
- Cumin seeds – 1tsp
- Curry leaves
- Onion – 1chopped
- Green chillies – 2 sliced
- Turmeric- 1tsp
Preparation
- Add peanuts, salt, garlic cloves, dry coconut, red chillies into a mixi jar and grind to fine powder
- Add oil to heated pan
- Add red chillies, mustard seeds, cumin seeds and curry leaves
- Add chopped onion and mirchi and fry till colour changes
- Add chopped amaranthus and mix all together
- Add 1tsp turmeric, close lid and cook till leaves are perfectly cooked
- Add grounded powder and fry for 3 to 4mins
- Amaranthus fry is ready to serve
