In this article, I’ll share how to prepare vaangi bath.
It is an easy and tasty flavoured rice recipe made with eggplant and a unique blend of spices. it is one of the popular south indian rice recipe which can be made for breakfast, lunch and dinner. This recipe is made with homemade spice mix which can also be used as curry powder also.
South indian cuisine is full of flavoured rice recipes which can be used for all 3 courses. moreover it can also be used for different types of occasions and celebration feast meal. One such multipurpose rice and eggplant based meal recipe is vangi bath recipe or also known as brinjal rice recipe.

Ingredients Required
For Vangi Bath Masala
- Red chillies – 6
- Peanuts – 1tbsp
- Sesame seeds – 1tbsp
- Cinnamon – 1
- Cloves – 3
- Pepper – 10
- Elachi 2
- Coriander seeds – 1tbsp
- Cumin seeds – 1/2tbsp
- Dry coconut powder – 2tbsp
For Vangi Bath Preparation
- Oil – 1tbsp
- Ghee – 1tbsp
- Chanadal – 1tsp
- Uraddal – 1tsp
- Mustard seeds – 1tsp
- Cumin seeds – 1tsp
- Curry leaves
- Bay leaves
- Turmeric – 1/2tsp
- Salt – 2tsp
- Peanuts – 1tbsp
- Cashews – 10 to 12
- Green chillies – 4 chopped
- Kasurimethi – 1/2tbsp
Preparation
Vangi Bath Masala Preparation
- Add peanuts to a heated pan, fry for 2min
- Now add cinnamon, cloves, elachi, pepper,coriander seeds, cumin seeds, red chillies and fry for 2min
- Now add sesame seeds, dry coconut powder and fry till it turns auromatic
- Turn off the stove and let cool for sometime
- Transfer to mixi jar and grind to fine powder
- Vangi bath masala powder is ready
Vangi Bath Preparation
- Add 1tbsp oil, 1tbsp ghee to heated pan
- Now add chanadal, uraddal, mustard seeds, cumin seeds, green chillies, peanuts, curry leaves, cashews, bay leaves and fry
- Now add chopped brinjal and mix all together
- Add turmeric, salt and mix
- Close lid and cook till brinjal is cooked perfectly
- Now add vangi bath masala and fry for 2min
- Finally add boiled rice and mix
- Vangi bath is ready to serve
