Bitter Gourd Fry/ Bitter Gourd Fry - is an easy, quick and healthy dish. Karela is also known as kakarakaya or bitter gourd or bitter melon.


Traditional Indian medicine suggests to use bitter gourds to aid in relieving diabetes, stomach complaints, cough and several other conditions. To realize the full benefits from bitter gourd, you would have to use it quite often and a quick fix recipe such as this one can come in very handy. 

Not only fry recipe, we can prepare Bitter Gourd Pickle and can be stored for months. Now lets check out this fry recipe. I am sharing my Youtube video here so it would be easy for you to follow.


Ingredients Required

  • Bitter gourd - 1/2kg
  • Onion - 2
  • Green chillies - 2
  • Oil - 4tbsp
  • Red chillies - 2
  • Chanadal - 1tsp
  • Uraddal - 1tsp
  • Mustard seeds - 1tsp
  • Cumin seeds - 1tsp
  • Curry leaves
  • Turmeric - 1/2tsp
  • Salt - 3tsp
  • Red chilli powder - 2tsp
  • Jaggery - 3tbsp
  • Coriander leaves
Preparation

  1. Chop bitter gourd into round pieces.
  2. Add oil into a heated pan.
  3. For tampering add red chillies, channadal, uraddal, mustard seeds, cumin seeds, curry leaves and fry
  4. Now add chopped onion and green chillies and fry for 2 to 3mins.
  5. Onion no need to fry completely, as bitter gourd takes time to fry so we can add bitter gourd pieces and let both fry inbetween medium to high heat.
  6. Once bitter gourd pieces are slightly cooked add turmeric, salt and cook some more time till bitter gourd is fried properly.
  7. Now add red chilli powder and fry for 2mins
  8. Then add jaggery and mix. This is optional, but people who are trying for the first time they may not like this without jaggery, so add it and saute for 2 to 3min.
  9. Finally garnish with coriander leaves.
  10. Bitter gourd fry is ready to serve.
