Egg Masala Fry or Masala Egg Fry - is a very easy and quick to make recipe that can be prepared in no time as it does not involve much of ingredients or cooking process. It can be served as side dish along with sambar, rasam, biryani or any other main dish.

Ingredients Required
- Eggs - 4
- Oil- 3tbsp
- Red chillies - 2
- Mustard seeds - 1/2tsp
- Cumin seeds - 1/2tsp
- Curry leaves
- Onion - 3
- Green chillies - 2
- Turmeric - 1/2tsp
- Salt - 2tsp
- Red chilli powder - 2tsp
- Coriander powder - 1tsp
- Jeera powder - 1/2tsp
- Garam masala - 1/2tsp
- Coriander leaves
Preparation
- Boil 4 eggs and peel off the shells.
- Add 2tsp oil into a pan.
- Add boiled eggs and fry for 3 to 4mins.
- Now cut each egg into 4 slices and keep aside.
- Now to start curry process add a tsp oil into same pan.
- For tampering add red chillies, mustard seeds, cumin seeds, curry leaves and fry.
- Add chopped onion and green chillies and fry till colour changes.
- Now add turmeric, salt, red chilli powder, coriander powder,jeera powder,garam masala and fry for 3 to 4mins so that all powders are fried properly.
- Now add bloiled and sliced eggs and mix.
- Finally garnish with coriander leaves.
- Egg masala fry is ready to serve.
