Pani Puri or golgappas-is a popular street food of India, where crisp fried dough balls (puri) are stuffed with potatoes, spicy tangy water or sweet chutney.
This is an easy pani puri recipe as you don’t need to make the sweet tamarind chutney. Pani Literally translates to water and here the puris are fried puffed crisp dough balls which are hollow. Generally, the water or pani is sour, tangy as well as spicy.
Its one of the popular street foods of India. Whereas in Mumbai, it is called pani puri. In the northern states, its called golgappa and in bengal, its called as puchka. In Bihar and Jharkand its known as gupchup.
Whatever the name is process is same and taste is delicious. So now lets checkout the pani puri recipe. I am sharing my Youtube video here so it would be easy for you to follow.
First lets check out the ingredients of puri, curry, pani
Ingredients Required
For Puri
- Bombay Ravva - 3 cups
- Maida (all purpose flour) - 1 cup
- Salt - 1tsp
For Curry
- Potatoes - 5
- Salt - 1tsp
- Red chilli powder - 1tsp
- Coriander powder - 1tsp
- Jeera powder - 1/2tsp
- Black salt- 1/2tsp
- Chat masala - 1tsp
- Coriander leaves
For Pani
- Coriander leaves - 1cup
- Pudina - 1cup
- Salt - 1tsp
- Ginger - small piece
- Green chillies - 4
- Tamarind soaked(very little)
Preparation
Puri Preparation
- Add bombay ravva(sooji),maida and salt into a mixing bowl and mix together
- Add water and mix like chapathi dough
- Add a wet cloth on top of the dough and let rest for 30mins
- 30mins later prepare chapathis by rolling (not too thick or not too thin)
- Now with a small cap or any small round bowl cut them like pooris.
- Every time close the dough and prepared pooris with we cloth till you fry them.
- Now add pooris one by one and fry both sides.
- Pooris are ready now.
Curry Preparation
- Boil potatoes for 4 to 5 whistles.
- Peel off the layer and mash them.
- Now add coriander powder, jeera powder, salt, red chilli powder, chat masala, black salt, coriander leaves as mentioned above quantity and mix all together.
- Now curry is ready
Pani Preparation
- Add coriander leaves, pudina, green chilles, salt, ginger into a mixi jar and grind into fine paste.
- Add 1/2 litre water into mixi jar and mix with paste.
- Now add them into a bowl placed with strainer and transfer water into the bowl.
- Now add tamarind water extracted from soaked tamarind and mix all together.
- Pani is ready.
