Capsicum Egg Fried Rice The most easiest and tastiest rice recipe for instant lunch or dinner. It is more tastier than the egg fried rice, as we mix capsicum and very little tomato also. In the busy mornings this is perfect lunchbox recipe which can be made very fast.
In this we can add veggies of our choice, I added capsicum and tomato along with egg. Mostly I prefer this rice recipe when i'm bored of cooking. Simply I cook rice and prepare this. Or we can make this with left over rice as well.
For this recipe we use ghee instead of oil. Ghee, cumin seeds and capsicum are the perfect combination so prefer ghee.
And rice should be cooked untill dry rice should be non sticky so water should be reduced while cooking than we use for normal rice then fried rice also will be dry and tasty. I added tomato also, but you can skip tomato if you don't like it. Only capsicum will be enough.

Ingredients Required
- Capsicum - 1
- Eggs - 3
- Tomato - 1
- Onion - 1
- Green chillies - 3
- Salt - 2tsp
- Red chilli powder - 1/2tsp
- Turmeric - 1/2tsp
- Ghee - 2tbsp
- Cumin seeds - 2tbsp
- Garam masala - 1/2tsp
- Ginger garlic paste - 1/2tsp
- Coriander leaves
Preparation
1. Add ghee into heated pan.
2. Add cumin seeds and let fry
3. Now add chopped green chillies, onion and fry till colour changes
4. Then add ginger garlic paste and saute for 2mins
5. Now add chopped capsicum, salt and turmeric and fry till it is fried properly. Do it in medium heat so that it will be
fried fast as it is less quantity.
6. Then add tomato and cook till tomato is soft and mushy
7. Now all veggies are cooked perfectly, add eggs and let fry
8. Eggs should be cooked properly, completely scrambled
9. Then add red chilli powder, garam masala and saute for 2mins
10. Now add cooked rice and saute for 4 to 5mins
11. Finally garnish with coriander leaves
