Carrot Rice - This Carrot rice is lightly spicy and delicious. It is made with cooked rice, chopped carrots, this mild dish is very easy to prepare. If u have some leftover rice and carrots, then this rice recipe can be prepared easily and can be customized to the readily available ingredients you have.
It can be prepared with less ingredients and quickly made. For this carrot rice I used basmathi rice, you can use normal rice as well. Better cook rice before 4hrs you make the recipe. Then rice will be dry and it will be easy to prepare.
I used cashews also for this recipe. But it is completely optional. And this recipe can be made with chopped or grated carrots. I made this recipe with chopped carrots. So now lets quickly checkout the recipe.

Ingredients Required
- Oil - 1tbsp
- Ghee - 2tbsp
- Red chillies - 1
- Chanadal - 1tsp
- Uraddal - 1tsp
- Cumin seeds - 1tsp
- Curry leaves
- Cashews - 5 to 8 (optional)
- Green chillies(sliced) - 2
- Onion - 1
- Carrot - 2
- Salt - 2tsp
- Red chilli powder - 2tsp
- Coriander powder - 1/2tsp
- Garam masala - 1/2tsp
- Coriander leaves
Preparation
1. Cook rice and let it cool completely.
2. Add oil and ghee into a heated pan.
3. Add red chillies, chanadal, uraddal, cumin seeds, curry leaves and let them fry.
4. Then add green chillies, cashews, chopped onion and saute for 2mins.
5. Now add chopped carrot and mix.
6. Add salt and let fry, so that carrot pieces will be quickly becomes soft.
7. Cook till carrot is fried properly.
8. Then add red chilli powder, coriander powder, garam masala and mix.
(All the 3 are optional as we added green chillies)
9. Let them fry for 2mins.
10. Now add cooked rice and mix for 3 to 4mins.
11. Finally garnish with coriander leaves.
12. Carrot rice is ready to serve.
