In this post I'm going to share vegetable pulao recipe which can be made easily will all readily available ingredients at home. This pulao tastes great with chicken curry and raitha. I'll share my version of chicken curry and raitha too here.
There is difference between biryani and pulao. In biryani we add layers and in pulao we add all veggies and saute together. For biryani marination is also important, whereas in pulao no need of marination and can be made instantly.
Here I'm using basmathi rice to prepare this pulao, you can use normal rice as well. And I added vegetables, Potato, Carrot, Tomato, Onion, Green chillies, Peas, Beans. You can add vegetables of your choice. Generally I prepare only chicken biryani. But this time I tried this vegetable pulao recipe for the 1st time and came out perfect.

Lets checkout the ingredients for vegetable pulao.
Ingredients Required
- Basmathi Rice - 3cups(with 125ml cup)
- Vegetables of your choice
- Coriander leaves
- Mint leaves
- Salt - 3tsp
- Red chilli powder - 1/2tsp
- Garam masala - 1tsp
- Curd - 3tbsp
- Whole garam masala spices
- Oil - 2tbsp
- Ghee - 2tbsp
- Ginger garlic paste - 2tbsp
Preparation
I'm preparing this pulao in rice cooker. You can follow same process in either pressure cooker or normal pan which we use for curries. If you are using pressure cooker then cook for 2 whistles in high heat and in sim for 5mins.
1. Add rice into a bowl and clean twice.
2. Add water and let soak for 20mins
3. Meanwhile chop all veggies and keep aside.
4. 20mins later turn on the rice cooker, add oil and ghee.
5. Now add whole garam masala spices. Or you can add which are readily available.
6. Now add chopped onion and green chillies and saute for 2mins
7. Add all vegetables and saute for 5mins.
8. Add ginger garlic paste and fry for 2mins
9. Add salt and red chilli powder(optional) and saute for a minute.
10. Now add whisked curd, this is compulsory for this pulao. Saute for a minute.
11. Now add coriander leaves and mint leaves
12. Then add garam masala and mix. Saute for a minute. This is Homemade Garam Masala
13. Now add soaked rice and mix.
14. Now add double quantity water. that means I added 6cups water as I added 3cups rice. If you are making in pressure cooker then half cup to be reduced. Then rice will be perfect.
15. Close lid and cook till rice is cooked perfectly and rice cooker turns off automatically. Leave it for 5mins and then open lid.
Delicious Biryani is ready to serve.
Now lets checkout chicken curry. Chicken curry also can be made in many ways. This is the way I follow mostly and tastes great. It is perfect combination for the pulao I mentioned above.
Generally I prepare curry in 2 ways. This is one way and this is without marination. And can be prepared instantly. Even people new to cooking also can make easily. Now quickly lets checkout the ingredients and process of preparing.
Ingredients Required
- Chicken - 1/2kg
- Onion - 2
- Tomato - 1
- Cinnamon -1
- Cloves - 2
- Ginger garlic paste - 2tbsp
- Salt - 3tsp
- Red chilli powder - 4tsp
- Turmeric - 1/2tsp
- Coriander powder - 1tsp
- Jeera powder - 1/2tsp
- Garam masala - 1tsp
- Coriander leaves
- Oil - 3tbsp
Preparation
1. Add oil into a pan and add cloves, cinnamon.
2. Now add chopped onion and green chillies and saute for a minute.
3. Now add tomatoes also. Onion no need to change colour. Just add tomatoes and mix.
4. Now add cleaned chicken also and mix.
5. Don't add salt or red chilli powder now. Without salt chicken cooks fast. So now close lid and cook for 10mins in low heat. mix frequently in the middle.
6. 10mins later chicken will be almost cooked.
7. Now add salt, red chilli powder, ginger garlic paste, curd and mix all together. Curd is completely optional. In marination process generally I use curd, so I added here also. It adds extra taste, if u like you can add it otherwise skip.
8. Mix all together, close lid and let cook for 5 to 8mins in low heat
9. Then add coriander powder, jeera powder and garam masala and mix.
10. Close lid and cook for 2mins, so that chicken absorbs all flavours. Finally garnish with coriander leaves.
11. Delicious chicken curry is ready to serve.
