Beans Coconut Fry - Beans fry is a quick and tasty south Indian recipe which can be prepared very easily. This tastes great when mixed with coconut.
This fry can be made in 2 ways. Beans can be fried directly without pressure cooked is one process. And can be made with pressure cooked beans also. Both varieties are good. In this post I will show recipe with pressure cooked beans. And the coconut I used is fresh coconut but it is not used directly.
Than adding fresh coconut or dry coconut powder, we can use fried coconut powder which is made from fresh coconut. Generally I make it and store it in refrigerator for some months. This can be used in any fries. I'll show clear process of making coconut powder.
For this fry we don't need red chilli powder. It tastes great with green chilli flavour. It tastes same as in hotel/mess.
For this recipe I'm using 250gm of beans. And coconut powder we need is 4tbsp or even more. So now lets quickly check out the ingredients and complete process of preparing this fry along with step by step pics.
Ingredients Required
- Beans - 250gm
- Coconut Powder - 4 to 5tbsp
- Oil - 2tbsp
- Red chillies - 2
- Chanadal - 1tsp
- Uraddal - 1tsp
- Mustard seeds - 1tsp
- Cumin seeds - 1tsp
- Curry leaves
- Salt - 1 1/2tsp
- Onion - 1
- Green chillies - 4 to 5
- Turmeric - 1/2tsp
- Coriander leaves
Preparation
1. Chop beans into desired size.
3. Now keep it in a cooker and cook for 4 whistles in high heat.
4. 4 whistles later, transfer beans into a strainer and keep aside, so that beans are relieved from water completely.
5. Now to prepare green chilli paste add 4 to 5 green chilies and salt into a mixi jar and grind to coarse paste.
Green chillies number is completely based on the spicy of those chillies and the quantity of curry to be made.
6. Now let's start the curry process. Add 2tbsp oil into a heated pan.
7. Let it heat properly and add all tempering spices like red chillies, chanadal, uraddal, mustard seeds, cumin seeds, curry leaves.
8. Add chopped onion and fry till it is transparent, no need fry till colour change. Curry taste changes if it is fried more.
9. Add turmeric and saute for 2mins.
10. Then add green chilli paste and saute for 3 to 4mins, till it is fried properly. As we added raw green chillies, the paste should be fried properly.
11. Now add cooked beans and saute them in medium heat for about 6 to 8mins.
Now let us checkout the process of preparing coconut powder which can be stored for many months and can be used in any fries or curries too.
Making Coconut Powder
1. Chop coconut into small pieces or you can grate them with grater.
2. Now add them into mixi jar and grind into powder. Grind them by stopping otherwise it becomes wet, powder should be dry.
3. Now dry roast this powder for about 5 to 6 mins in low heat.
4. 5mins later it slightly changes colour with nice aromatic smell, then turn off the stove and let it cool.
5. This can be stored in a air tight container in refrigerator for about 6 months.
So using this coconut we are going to prepare this fry recipe.
Once the beans are fried properly add coconut powder and mix all together for 2min.
Finally garnish with coriander leaves
