So now lets checkout the ingredients and process of making perfect idly batter recipe.
Ingredients Required
- Uraddal - 2cups
- Idly ravva/Idly sooji - 4cups
- Salt - 3tsp
2. Water should be clean and transparent after the cleaning process as shown below
3. Soak for minimum 4 to 5 hours. And 1 hour before grinding the batter soak idly sooji and clean twice.
5. Idly batter will be perfect if grinded in grinder than in mixier grinder. So generally I prefer only grinder for grinding idly batter. And it stay longer period too. So now lets add uraddal into grinder.
6. Add 2cups or more water if needed. It is based on the uraddal you are using.
7. Meanwhile let us squeeze water from idly sooji and keep aside.
9. Transfer into a bowl and let ferment the idly batter for about 8hrs or overnight. You can see the layer formed on top of the batter, so it is fermented completely. This process of fermentation is based on the weather conditions too. In cool climates it takes more time to ferment, and in hot climates it ferments soon.
