Drumstick Leaves Chutney- Drumstick/moringa leaves chutney is healthy and tasty south Indian chutney which goes well with any breakfast like idly, dosa, vada and rice too.

Some tips to be followed to make this recipe. Moringa leaves should not be fried more or should not be covered with lid while frying in pan.
Red chillies, green chillies, tamarind are required little more than we require for normal chutneys.

Ingredients Required
- Oil - 2tbsp
- Cumin seeds - 1tbsp
- Coriander seeds - 1tbsp
- Red chillies - 6 to 7
- Green chillies - 6 to 7
- Moringa leaves - 1cup
- Salt - 2tsp
- Tamarind - small lemon size ball
- Garlic cloves - 4 to 5
- Chanadal - 1/2tsp
- Uraddal - 1/2tsp
- Mustard seeds - 1/2tsp
- Curry leaves
Preparation
1. Add oil into heated pan.
2. Add cumin seeds, coriander seeds, red chillies, green chillies and fry for 4 to 5mins.
3. Then add moringa leaves and fry for 3 to 4mins. Should not close the pan with lid and moringa leaves should not be fried more. It tastes different if it is fried more. Finally leaves should be crisp.
4. Now add tamarind required for chutney(this chutney requires more than the required for preparing chutneys) and garlic cloves.
5. Saute for 1 to 2 mins in low heat and turn off the stove and let it cool for sometime.
6. Then add salt and fried moringa leaves into mixi jar and grind into powder. If water is added here leaves will not grind properly.
7. Now add required water and grind into paste.
For Tampering
1. Add oil into heated pan,add chanadal, uraddal, mustard seeds, cumin seeds, curry leaves and fry.
2. Add into chutney andi mix all together.
Finally moringa leaves/drumstick leaves chutney is ready to serve.
